A Break, but now...I'M BACK!

Hi all!

I hope everyone is staying nice and toasty warm. Can you believe, here on the beach, we actually saw snow and temps dipped down into the 20's in March?!!! Oh it's ridiculous! I am so ready for sun, warmth...summer!

Ok...enough whining...I am back after a much needed break. Of course, I think I need a break for my break, but that's a whole other post...LOL!

I have a few yummy recipes to share and some other great stuff.

Easy dinner fit for a royal!

Last nights dinner at the castle was sooooooo easy and sooooooo yummy! Even my little prince ate it and he is as picky a royal as they come! If you try this recipe, please leave me a comment and let me know how your bunch likes it!

Chicken breasts--I used about 6 boneless/skinless
red bell pepper--it's what I had
orange bell pepper--it's what I had
Medium onion
Ranch dressing

Ok, cut the onion into rings and the peppers into slices. Pour ranch dressing into a large bowl and add chicken breasts, onion, and peppers. Coat well. Put the coated chicken breasts, onions, peppers into a baking dish. Cook in a 350 degree oven for about an hour. I have made this before using frozen chicken breasts. In that case, increase cooking time to 2 hours.

I served this over rice, but you could also serve over mashed potatoes also.

Yum-O!! Tater Tot Casserole--Duggar Style

Hi again all!

Ok...I have always been mesmerized by The Duggar Family. Mrs. Duggar just gave birth to their 18th child...YES...you read that right **18**!!!! Bless her heart and she always has a smile on her sweet face. How is that possible?????

I LOVE my 5 royals-in-training, BUT compared to Mama Duggar...I am a total failure!!

I have always wanted to just spend some time with Mrs. Duggar and pick her brain. How does she do it??? Could she come to my palace and whip these little royals-to-be in shape for me??? PLEASEEEEEEEE!! Ok, I will quit begging now!

Anyway, I was sooooo happy to see that the Duggars decided to write a book. The day it was released, I bought it! I read that thing from front to back in like 2 days...LOL!! It was a great read for me. I loved that they included recipes and tips in the book.

Sooooo, I have been trying some of their recipes and I have to say I was pleasantly surprised by their Tater Tot Casserole recipe. I made tater tot casserole once before, years ago. No one liked it! I was a bit apprehensive to try it again, but decided to go ahead because the Duggar's recipe was a bit different than the one I used.

I must say...not only did it feed my whole royal family, but EVERYONE LOVED IT!!! Yes, yes...they ate and ate and ate!! All I kept hearing was, "Mom, this is sooooooo good!" I was one pleased princess!!!

TATER TOT CASSEROLE
2 lb ground turkey cooked, seasoned, drained
3 2lb bags tater tots *****I had a 5lb bag and I only used 3/4 of it*****
2 cans cream of mushroom
2 cans evaporated milk
2 cans cream of chicken
Brown meat & place in large cass. dish
Cover with tater tots.
Mix soup & milk together.
Pour over top.
Bake at 350 for 1 Hour. Makes 2- 9”X13” pans *****Only made 1- 9"X13" & 1-8"X8"*****

Hi all!

Ok...so I finally am getting around to posting my first blog entry! Hey, I've been busy, what can i say?? Taking care of five royals-in-traing who can all be royal pains in the bottom can take a lot of time. Not to mention with this awful economy, my maid and butler have quit and run off...so I am on my own there too. Oh, then I have to make sure to keep the Court Jester happy and princess or not, we all know what a task that can be...UGH!

Sooooo...a bit of background. I am Princess Butterkup...momma to 5 royals-in-training. They are Princess Carnation (16), Princess Marigold (12), Princess Daisy (8), Prince KoolDude (no pretty flower name for him :o( , and finally little Miss Princess Iris. They are all homeschooled and have been for the last eight years. I am married to the Court Jester...yes, I know that's not how the fairytale goes, but what can I say? He swept me off my pretty royal feet! We live in the beautiful kingdom of Bliss...also known to you non-royals as the Outer Banks of North Carolina.

Even though, I am a princess, things are tough! Everyone is having a tough time of it. I have to watch every cent this royal family spends. I scour the web for the best deals and some legit money making opps. I have yet to find the opp that's going to make me rich (ok richer than I am ;O), but I have found a few that add a bit to our income each month. Hey every little bit helps right?! I shop deals, use coupons, and have found some other blogs to be a wealth of information. I will post some of my favs later.

I hope some of the things I post inspire some of you...if not inspire you, maybe make you laugh a bit, and at times help you to know you ARE NOT ALONE in this crazy life!
